The remains of a Neolithic settlement in Setúbal provide no clues as to whether the region’s most famous delicacy was enjoyed at the time. The truth, however, in this land of survivors of occupation and conflict is that the cuttlefish is often imported. The local variety is too small and too scarce to satisfy the thousands of people who order this unique dish every day. Fried in a thin batter, lemon juice should be squeezed onto the cuttlefish when it arrives at the table.
